Method
 

Step-by-Step Instructions
  1. Prepare Jackfruit: Drain the jackfruit, cook with onion and bay leaf, simmer for 10 minutes, then drain and set aside.
  2. Make the Sauce: Toast dried chiles, soak them, char tomatoes and onion, then blend everything until smooth.
  3. Blend the Ingredients: Blend soaked chiles, charred tomatoes, onion, garlic, spices, vinegar, and soaking liquid until smooth. Strain the sauce.
  4. Cook the Filling: Sauté oyster mushrooms in oil until golden, then stir in jackfruit and cook until lightly browned.
  5. Combine with Sauce: Add sauce and broth to the mixture and simmer for 25 minutes.
  6. Serve Tacos: Drain filling, warm tortillas, fill generously, and garnish with cilantro and onion.
  7. Optional Quesabirrias: Dip tortillas in broth, add cheese and filling, fold and cook until crispy.
