  • 1/2 cup Almond Milk Gradually mix in while mashing

  • 2 tablespoons Nut Butter Almond or peanut butter
  • 1/4 cup Chopped Nuts Pecans or walnuts for added crunch
  • 1 cup Fresh Fruit Sliced bananas, berries, or apples
  • 1/2 cup Greek Yogurt Optional for added creaminess and protein
  • 1 tablespoon Flaxseed For thickening and nutrition

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Scrub and clean the sweet potatoes and place them on a lined baking sheet.
  3. Bake in the preheated oven for 45-60 minutes until fork-tender.
  4. Let the sweet potatoes cool for 10-15 minutes, then peel off the skin.
  5. Mash the sweet potatoes in a mixing bowl, gradually adding almond milk.
  6. Customize your mixture with optional ingredients, and mix well.
  7. If the mixture was refrigerated, gently warm it on the stove or microwave.
  8. Scoop into bowls and top with your favorite toppings.
