Step-by-Step Instructions
  1. Prepare the cream cheese filling by blending cream cheese, powdered sugar, vanilla extract, and strawberry extract until smooth.
  2. Preheat the oven to 350°F (175°C). Cream butter and sugar until fluffy. Add egg, vanilla, and food coloring until combined.
  3. In a separate bowl, whisk flour, baking powder, and baking soda. Gradually fold into the wet mixture until just combined.
  4. Line an 8x8-inch baking pan with parchment paper, press two-thirds of the cookie dough into the base, and spread the cream cheese filling over it.
  5. Crumble the remaining dough on top and bake for 30-32 minutes. The edges should be set, and the top golden.
  6. Cool the bars in the pan for 30-45 minutes, lift them out using parchment paper, and slice into squares for serving.
