- Preheat your oven to 350ºF (177ºC) and grease a 9x13 inch baking dish.
- In a small bowl, combine dried thyme leaves, garlic powder, Cajun seasoning, dry mustard, and salt.
- Slice the Vidalia onions into even rings and place them in a large mixing bowl. Toss with the seasoning mixture.
- Transfer the seasoned onions into the greased baking dish, spreading them out evenly.
- Lay thin slices of unsalted butter over the surface of the onions, then sprinkle mozzarella and cheddar cheese on top.
- Cover the baking dish with aluminum foil and bake for 45 minutes.
- After 45 minutes, uncover and sprinkle Parmesan cheese over the top. Bake uncovered for an additional 25–30 minutes.
- Once fully cooked, let cool for a few minutes, then serve warm as a side dish.
