  • 2 cups Mozzarella Cheese Substitutable with provolone.
  • 1 cup Cheddar Cheese Any type of cheddar works; sharp provides more flavor.
  • 1/2 cup Parmesan Cheese Grated Pecorino Romano can be a substitute.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350ºF (177ºC) and grease a 9x13 inch baking dish.
  2. In a small bowl, combine dried thyme leaves, garlic powder, Cajun seasoning, dry mustard, and salt.
  3. Slice the Vidalia onions into even rings and place them in a large mixing bowl. Toss with the seasoning mixture.
  4. Transfer the seasoned onions into the greased baking dish, spreading them out evenly.
  5. Lay thin slices of unsalted butter over the surface of the onions, then sprinkle mozzarella and cheddar cheese on top.
  6. Cover the baking dish with aluminum foil and bake for 45 minutes.
  7. After 45 minutes, uncover and sprinkle Parmesan cheese over the top. Bake uncovered for an additional 25–30 minutes.
  8. Once fully cooked, let cool for a few minutes, then serve warm as a side dish.
