Method
 

Step‑by‑Step Instructions
  1. Preheat your grill to medium heat, around 350°F (175°C).
  2. Remove the leaves from a large head of cauliflower, then carefully cut it into four thick steaks.
  3. Generously brush each cauliflower steak with mild tasting oil.
  4. Place the oiled cauliflower steaks directly over the grill grates for 5–6 minutes.
  5. Flip the steaks and grill for an additional 5–6 minutes on the other side to check for tenderness.
  6. Carefully remove the cauliflower steaks from the grill and brush each with mayonnaise.
  7. Sprinkle chili powder over the mayonnaise-coated cauliflower steaks, followed by crumbled cotija cheese.
  8. Add fresh cilantro for garnishing (if desired) and serve with lime wedges.
