Method
 

Step-by-Step Instructions
  1. Preheat a large skillet over medium heat for about 3-5 minutes.
  2. Mix together crumbled feta and shredded mozzarella cheese in a medium bowl.
  3. Drizzle a tablespoon of olive oil around the perimeter of the skillet.
  4. Place a flour tortilla in the skillet and sprinkle the cheese mixture over one half.
  5. Layer in spinach leaves, slices of red onion, and sun-dried tomatoes.
  6. Sprinkle salt and pepper over the fillings and fold the tortilla.
  7. Cook the folded quesadilla for about 3-4 minutes until golden brown.
  8. Flip the quesadilla and cook the other side for an additional 3-4 minutes.
  9. Repeat the cooking process with remaining tortillas and filling.
  10. Slice cooked quesadillas into wedges and serve with tzatziki or yogurt.
