- Beat together the softened unsalted butter and granulated sugar using an electric mixer on medium speed for about 2-3 minutes.
- Add one large egg and vanilla extract to the creamed mixture and beat until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually mix into the wet ingredients.
- Scoop about 2 tablespoons of dough for each cookie and place onto the prepared trays, leaving space between each.
- Press a canned pineapple ring into the center of each cookie dough mound and sprinkle with additional sugar.
