Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare the ramekins by greasing them with butter and dusting with flour.
  2. Separate the egg yolks from the whites into three bowls, whisk the yolks lightly.
  3. In a saucepan, melt the butter, then add flour, salt, and Herbes de Provence stirring for 2-3 minutes until golden.
  4. Whisk in warmed milk until smooth, cook until slightly thickened, then fold in yolks and cheeses.
  5. Beat the egg whites until soft peaks form, then carefully fold into the cheese mixture.
  6. Pour the mixture into the prepared ramekins, filling each about three-quarters full.
  7. Bake for about 20-25 minutes until puffed and golden, avoiding opening the oven during baking.
  8. Allow to cool for a minute, then garnish with fresh thyme and serve immediately.
