  • ½ cup Light Brown Sugar can substitute with dark brown sugar
  • 1 large Egg room temperature
  • 2 tablespoons Fresh Lemon Juice use fresh juice
  • 1 teaspoon Vanilla Extract pure extract preferred
  • 1 ½ cups All-Purpose Flour sifted to avoid lumps
  • 1 teaspoon Baking Powder fresh
  • ½ teaspoon Baking Soda fresh
  • ½ teaspoon Salt
For the Blueberry Mix
  • 1 cup Wild Frozen Blueberries do not use fresh
For the Lemon Sugar Coating
  • ¼ cup Granulated Sugar
  • 1 lemon Lemon Zest fresh zest preferred

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, cream together the butter, white sugar, light brown sugar, and lemon zest for 3-4 minutes until fluffy.
  2. Mix in the egg, lemon juice, and vanilla extract until combined.
  3. In another bowl, sift together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture; fold in the blueberries.
  5. Scoop the dough onto a baking sheet and refrigerate for 1-2 hours.
  6. Mix granulated sugar with lemon zest; rub together until fragrant.
  7. Preheat oven to 350°F (175°C). Coat cookie dough balls in lemon sugar and bake for 16-17 minutes.
  8. Let cookies cool on a wire rack after baking.
