Step-by-Step Instructions
  1. Activate 1 packet of quick rise yeast in ¾ cup of warm water. In a bowl, combine 2 cups of flour and ½ teaspoon of salt. Add 1 tablespoon olive oil and yeast mixture. Stir and knead for about 10 minutes. Let it rise for about 1 hour.
  2. Preheat oven to 425°F. Roast sliced cherry tomatoes and artichoke hearts on a baking sheet drizzled with olive oil and seasoned with salt and pepper for 10-15 minutes until softened.
  3. Mix together 1 cup Greek yogurt, 1 tablespoon minced garlic, 1 tablespoon fresh dill, and juice of half a lemon in a medium bowl. Chill in the refrigerator until ready to use.
  4. After the dough rises, punch it down, knead briefly, and shape into a disk. Roll out to desired thickness and transfer onto parchment paper.
  5. Brush dough with Greek marinade or dressing, spread tzatziki sauce, and top with gyro meat, roasted vegetables, red onions, and bell pepper strips. Sprinkle feta cheese on top.
  6. Bake in preheated oven at 375°F for 10-15 minutes until crust is golden and cheese is bubbling. Broil for an additional 5-10 minutes for a crispy finish.
  7. Let pizza cool slightly. Garnish with sliced cucumber and drizzle remaining tzatziki sauce over top. Slice and serve immediately.
