- Activate 1 packet of quick rise yeast in ¾ cup of warm water. In a bowl, combine 2 cups of flour and ½ teaspoon of salt. Add 1 tablespoon olive oil and yeast mixture. Stir and knead for about 10 minutes. Let it rise for about 1 hour.
- Preheat oven to 425°F. Roast sliced cherry tomatoes and artichoke hearts on a baking sheet drizzled with olive oil and seasoned with salt and pepper for 10-15 minutes until softened.
- Mix together 1 cup Greek yogurt, 1 tablespoon minced garlic, 1 tablespoon fresh dill, and juice of half a lemon in a medium bowl. Chill in the refrigerator until ready to use.
- After the dough rises, punch it down, knead briefly, and shape into a disk. Roll out to desired thickness and transfer onto parchment paper.
- Brush dough with Greek marinade or dressing, spread tzatziki sauce, and top with gyro meat, roasted vegetables, red onions, and bell pepper strips. Sprinkle feta cheese on top.
- Bake in preheated oven at 375°F for 10-15 minutes until crust is golden and cheese is bubbling. Broil for an additional 5-10 minutes for a crispy finish.
- Let pizza cool slightly. Garnish with sliced cucumber and drizzle remaining tzatziki sauce over top. Slice and serve immediately.
