- Begin by frying 6-8 slices of bacon in a skillet over medium heat for 6-8 minutes until golden brown and crispy. Transfer to a plate lined with paper towels.
- Slice 2-3 firm tomatoes and place in a bowl. Drizzle with 1-2 tablespoons of olive oil and 1 tablespoon of red wine vinegar, seasoning with salt and black pepper to taste. Allow to marinate for about 10 minutes.
- In a small bowl, whisk together ½ cup of mayonnaise with a spoonful of marinated tomato mixture until smooth. Set aside.
