  • 8 oz Feta Cheese can be substituted with goat cheese or ricotta
  • 2 tbsp Dill fresh is best
  • 2 tbsp Mint can replace with basil if unavailable
  • 1 tbsp Lemon Zest from unwaxed lemons
For the Pastry
  • 1 pack Phyllo Pastry keep covered with a damp cloth while working
  • 4 tbsp Olive Oil for brushing
For the Chili Honey Drizzle
  • 1/2 cup Honey high-quality recommended
  • 1 tbsp Chili Flakes adjust to taste

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, crumble the feta cheese and add dill, mint, lemon zest, and a pinch of pepper. Mix until cohesive.
  3. Lay two sheets of phyllo on a clean surface, brush with olive oil, cut into long strips.
  4. Take a phyllo strip, place a tablespoon of filling near one end, fold edges over, and roll tightly.
  5. Brush the tops of the rolls with olive oil and bake for 18-20 minutes until golden brown.
  6. Combine honey, chili flakes, and lemon juice in a saucepan over medium heat; stir until warm.
  7. Remove from oven, drizzle with chili honey, and serve warm.
