- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, crumble the feta cheese and add dill, mint, lemon zest, and a pinch of pepper. Mix until cohesive.
- Lay two sheets of phyllo on a clean surface, brush with olive oil, cut into long strips.
- Take a phyllo strip, place a tablespoon of filling near one end, fold edges over, and roll tightly.
- Brush the tops of the rolls with olive oil and bake for 18-20 minutes until golden brown.
- Combine honey, chili flakes, and lemon juice in a saucepan over medium heat; stir until warm.
- Remove from oven, drizzle with chili honey, and serve warm.
