- Preheat your oven to 375°F (190°C).

- Pat the pork loin roast dry, rub it with olive oil, and season with salt and pepper.

- Combine panko breadcrumbs, parsley, rosemary, thyme, and garlic in a bowl.

- Press the breadcrumb mixture firmly onto the pork loin.

- Roast the pork loin for 20 minutes.

- Prepare the apple cider glaze by whisking together cider, mustard, and honey in a saucepan over medium heat.

- Glaze the pork with half of the apple cider mixture after 20 minutes.

- Continue roasting for an additional 20-30 minutes until the internal temperature reaches 145°F (63°C).

- Brush the remaining glaze over the pork with 10 minutes left of cooking.

- Remove the pork from the oven and let it rest for 10 minutes before slicing.
