Method
 

Preparation and Mixing
  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan thoroughly.
  2. In a mixing bowl, melt 9 tablespoons of butter and whisk in 1¼ cups of sugar, ¼ cup of cocoa powder, ½ teaspoon of vanilla, 1 tablespoon of red food coloring, salt, espresso powder, vinegar, and eggs one at a time, then fold in flour until just combined.
  3. In another bowl, beat 9 ounces of cream cheese until creamy; then add 3 tablespoons of sugar, ½ teaspoon of vanilla, and 1 egg yolk, mixing well.
Baking
  1. Distribute 1 tablespoon of brownie batter in each muffin cup, add 1 teaspoon of cream cheese mixture, and top with another teaspoon of brownie batter, swirling gently to marble.
  2. Bake in the preheated oven for 12 minutes until slightly springy. Cool for 5 minutes in the pan before transferring to a wire rack.
