Preparation and Mixing
- Preheat your oven to 350°F (175°C) and grease a mini muffin pan thoroughly.
- In a mixing bowl, melt 9 tablespoons of butter and whisk in 1¼ cups of sugar, ¼ cup of cocoa powder, ½ teaspoon of vanilla, 1 tablespoon of red food coloring, salt, espresso powder, vinegar, and eggs one at a time, then fold in flour until just combined.
- In another bowl, beat 9 ounces of cream cheese until creamy; then add 3 tablespoons of sugar, ½ teaspoon of vanilla, and 1 egg yolk, mixing well.
Baking
- Distribute 1 tablespoon of brownie batter in each muffin cup, add 1 teaspoon of cream cheese mixture, and top with another teaspoon of brownie batter, swirling gently to marble.
- Bake in the preheated oven for 12 minutes until slightly springy. Cool for 5 minutes in the pan before transferring to a wire rack.
