- Preheat your oven to 415℉ (215℃) and prepare a baking sheet by lightly coating with olive oil or lining with foil.
- In a large pot, fill it with water and add table salt. Bring to a rolling boil. Wash the potatoes and cut them into 1/4-inch slices. Use a heart-shaped cookie cutter to create shapes and add to boiling water. Parboil for 3-6 minutes.
- Drain the parboiled potatoes in a colander and let them cool briefly for a couple of minutes.
- In a mixing bowl, whisk together olive oil, kosher salt, freshly ground pepper, and any optional seasonings.
- Add the heart-shaped potatoes to the marinade and toss gently to coat. Let sit at room temperature for about 5 minutes.
- Spread the marinated potatoes on the prepared baking sheet and roast for 20-30 minutes, flipping halfway through, until golden-brown. Optional: broil for an extra 5 minutes for added crispiness.
