For the Potatoes
  • 4 large Yukon Gold Potatoes perfect for their fluffy texture
  • 1 cup Water for parboiling
  • 1 tbsp Table Salt adjust according to taste
For the Marinade
  • 3 tbsp Olive Oil can substitute with canola oil
  • 1 tbsp Kosher Salt or more table salt if you're out
  • 1 tsp Freshly Ground Pepper adjust based on flavor preferences
  • 1 tsp Caraway Seeds optional; can swap with rosemary or omit
  • 1 tsp Paprika optional; enhances flavor and color
  • 1 tbsp Dried Rosemary fresh rosemary is ideal but dried will work too

Method
 

Cooking Instructions
  1. Preheat your oven to 415℉ (215℃) and prepare a baking sheet by lightly coating with olive oil or lining with foil.
  2. In a large pot, fill it with water and add table salt. Bring to a rolling boil. Wash the potatoes and cut them into 1/4-inch slices. Use a heart-shaped cookie cutter to create shapes and add to boiling water. Parboil for 3-6 minutes.
  3. Drain the parboiled potatoes in a colander and let them cool briefly for a couple of minutes.
  4. In a mixing bowl, whisk together olive oil, kosher salt, freshly ground pepper, and any optional seasonings.
  5. Add the heart-shaped potatoes to the marinade and toss gently to coat. Let sit at room temperature for about 5 minutes.
  6. Spread the marinated potatoes on the prepared baking sheet and roast for 20-30 minutes, flipping halfway through, until golden-brown. Optional: broil for an extra 5 minutes for added crispiness.
