- Preheat your oven to 350°F (177°C) and lightly coat a muffin pan with nonstick spray.
- In a large mixing bowl, whisk together the rolled oats, almond milk, maple syrup, and eggs until well combined. Add chopped apples and ground cinnamon, mixing gently.
- If including nuts, fold in the chopped nuts at this stage.
- Scoop the oatmeal mixture evenly into the prepared muffin pan, filling each cup about 3/4 full.
- Optionally, sprinkle coarse sugar on top of each filled muffin cup.
- Bake for 28-30 minutes until edges are lightly browned and tops feel set.
- Cool in the pan for 5-10 minutes before gently lifting each cup out.
